Sweet Potato Fondants




6 sweet potatoes, peeled and cut into 3 equal pieces, each about two inches thick

2 tablespoons of Stellino Rub (see below)

2 tbsp, of olive oil

4 TBSP butter (optional)

1 cup of beef stock


Recipe for Stellino Rub:

1 tbsp of onion powder

1 tbsp of garlic powder

1 tbsp of paprika

1 tbsp of salt

1 tbsp of pepper



Preheat oven to 450

Brush the pieces of peeled sweet potatoes with olive oil and flavor with salt and pepper to taste.

In a skillet add the oil and cook over medium-high heat

Brush the potatoes with olive oil and sprinkle the Stellino Rub over the potatoes.

In a skillet, over medium-high heat, brown the potatoes in the hot oil for about 2 minutes per side.

Add the stock and the butter and bake in the oven for 45 minutes

Take them out and serve them
