Prepare the pan-fried potatoes as per the recipe. Then cook the glazed ham steaks—place in the oven to keep warm.
Prepare the poached eggs and place in a in a bowl of warm water while you make the Hollandaise sauce.
To serve, plate each dish with the potatoes on one side and the ham steak next to them. Place 2 poached eggs on top of the potatoes and cover with Hollandaise sauce.
Optionally, sprinkle chopped chives over the poached eggs, topping with the Hollandaise sauce.
