Brussel Sprouts with Bacon




2 pounds of Brussel sprouts trimmed, and cut in half

4 strips of bacon cut into ½  inch pieces

1 tablespoon of olive oil

Salt and Pepper to taste


Add the oil and the bacon to the pan and cook over medium heat until the bacon starts to brown about 3-4 minutes, take the bacon out of the pan and save the oil.

In a 4 qt, pot of salted boiling water parboils the trimmed Brussel sprouts for 3-4 minutes. Then transfer to a bowl of ice water to stop the cooking. When the spouts cool down dry them well with a towel.

Add the Brussel sprouts to the hot bacon oil and cook, stirring well for 5-6 minutes. Add the cooked bacon and cook one more minute stirring well. Add salt and pepper to taste then serve.
