Connie (Concetta) is this evasee’ (flared) copper pan. A real old school saucepan.
I nicknamed her after the housekeeper of one of my friends in Sicily. Next to my mom, she was one of the best cooks. She was pretty, always wore a smile, and cooked like a goddess.
Connie stands at 9 3/4 inches wide, 3.5 inches tall, and 2.5 mm thick. This pan is lined with stainless steel, and it proudly features a long cast iron handle, a style that I love. It makes it easy to move the pan around the stove. This pan is top of the line and it is heavy.
Few manufacturers feature similar products today and are only available for their most exclusive lines. This is akin to a great classic car, except it looks like new and it cooks marvelous food, the slightly conical shape makes it perfect for all your sauces and soups!
