This book was for me a complete change from my previous work , not so much in terms of the recipes and the food, but because I wanted for the first time to produce a larger book ( about 9X11.5) book about cooking. It was for me, at that time, the largest format I had ever printed in terms of a cookbook and it also had the heaviest paper I ever used.
Yet none of this matter especially when it comes to recipes. In this TV series for the first time I dedicate part of every show to one of my Chef Friends. We have some real great names that joined us on the set of these shows. They were all so incredible and their food was so awesome that I found myself becoming a student again, while live on TV, learning from the masters.
Chef Michael Cimarusti turned in an astonishing recipe of incredible elegance that is as easy to make as 1-2-3. His Halibut with Yukon Gold Potatoes and chive blossoms is often featured at my family table, Chef Neal Fraiser opens up a whole new culinary frontier for me with his Grilled Fillet of Beef with Farro , Haricot Verts and red wine sauce. Chef Elise Wiggins astonished us all on the set of our TV show with her Palisades Peach salad with prosciutto Crusted Goat Chese Balls dressed in a Hazelnut Mint Vinaigrette. Chef Patricia Williams, a former classical ballerina, knocked out of the park with her super simple version of an old French desert: “Clafouti”.
Yet what I love the most in this book is the photography, close up shots that make you want to touch the page and feel it. The food was photographed the way I see it in the kitchen as I am cooking. Even though not a word is spoken, when I cook in my kitchen, it feels like a romance novel has mixed with an action-adventure movie sequence. The food we produced in this book is absolutely, devastatingly beautiful and its taste will forever enslave your taste buds.

I am not making any more of these.

These cookbooks were not just printed, they were loved passionately even before the printing presses delivered them to me, it was part of a special moment in time for me and something that I will cherish forever.
