Serves 4Preheat the broiler. Place the onions and mushrooms on a baking sheet in an even layer. Drizzle the olive oil evenly over the top and sprinkle with the salt and pepper. Place under the broiler, 4-6 inches from the heating element, and broil for 15-20 minutes, until the edges of the onions are browned and the mushrooms have started to release their juices. Halfway through the cooking time, give the vegetables a good stir. Place the vegetables in a shallow serving dish or bowl. Sprinkle with the lemon juice, if you wish, the cheese and the basil. Serve hot or at room temperature. |
