Ingredients3 quarts water 2 pounds spinach leaves, washed and coarsley chopped 3 tablesppons olive oil 3 tablespoons pine nuts 4 garlic cloves, thcikly sliced 5 tablespoons golden raisins, soaked in 1/2 cup hot water for 20 minutes 1/2 teaspoon salt 1/4 teaspoon black pepper |
Serves 4Bring the water to a boil in a large pot set on high heat. Add the spinach a little at a time, pushing it down to the bottom of the pot with a spoon. Give it a good stir once all the spinach has been added, reduce the heat to medium-high and cook for 10 minutes, stirring often. Drain well and set aside. Heat the olive oil, pine nuts and garlic in a large saute pan set on high heat until the garlic and pine nuts begin to brown, about 2-3 minutes. Drain the raisins, discarding the water. Add the soinach, raisins, salt and pepper to the pan anc cook for 3-4 minutes, until heated through. Serve hot. |
