Nick Stellino's Greem Beans with Lemon, Mint and Garlic

Ingredients

3 tablespoons olive oil

1 pound green beans, trimmed, cut in half and parboiled for 3 minutes

1 tablespoon chopped garlic

2 tablespoons chopped fresh mint

1/4 teaspoon salt

1/8 teaspoon black pepper

3 tablespoons lemon juice

Serves 4

Heat the oil in a large nonstick saute pan set over medium-high heat until sizzling, about 2 minutes. Add the green beans and cook for 5 minutes, stirring occasionally, until just beginning to brown. Reduce the heat to medium, toss in the garlic, mint, salt and pepper anc cook for 2 minutes. Stir in the lemon juice and cook for 2 minutes longer. Serve warm or at room temperature.
