1 loaf crusty Italian bread (preferably day old) cut lengthwise into 1 inch slices
¼ cup olive oil
½ teaspoon of truffle oil
½ cup freshly grated Parmesan cheese
½ teaspoon salt
¼ teaspoon freshly ground black pepper.
Preheat oven to 400 degrees.
In a small dish, combine the olive oil and the truffle oil. Brush the bread slices lightly with oil and sprinkle with Parmesan cheese, salt and pepper. Place the slices of bread on a baking sheet and toast in the preheated oven until golden brown, about 6 minutes. Turn the slices over and toast the other side. Remove the bread from the oven and slice into long "breadsticks" or soup croutons.
For a more flavorful finish, precut the bread in either sticks or croutons, mix it with the other ingredients, then bake them on a baking tray turning them to brown evenly. It requires a bit more work but, it is well worth it.
