Ingredients

8 Tablespoons whipped Unsalted Butter

1 teaspoon Anchovy Paste

½ pound raw tartar quality ground beef*

1 large Egg Yolk

1 Tablespoon tiny Capers

2 Tablespoons finely diced Onion

1 ½ Tablespoons finely chopped Pimento Stuffed Olives

2 Tablespoons chopped Parsley

¼ teaspoon sweet Paprika

1 teaspoon Honey Mustard

¼ teaspoon Anchovy Paste

4 small Egg Bread Rolls or soft hamburger buns

1 whole peeled garlic clove

1 small lemon cut into 6 lemon wedges

Baby salad greens

Mix the softened, whipped butter with the anchovy paste until well blended and smooth. Set aside.

Mix the beef, egg yolk, capers, onions, olives, parsley, paprika, honey mustard, and anchovy paste until all items are well incorporated.

Form 4 delicate little patties.

Toast the bread. Rub gently with the clove of garlic.

Spread some of the butter mixture on both sides of the bread.

Place one raw burger patty on the bottom of the roll.

Squeeze the lemon wedge on top.

Place enough baby greens on top to cover the raw meat. Cover with top of roll.

Serve.

CHEF’S TIP:

If you desire you can add 1 -2 Tablespoons of chopped sweet pickle to the meat mixture for additional sweetness.

Served on small soft rolls, these are delicate sandwiches. If you would like more of a hearty serving, prepare fewer larger patties out of the meat and serve in larger soft oval rolls.
