Ingredients

5 Large Whole Eggs

5 Tablespoons water

2 cups Italian Style Breadcrumbs

1 teaspoon Paprika

1 teaspoon Salt

½ teaspoon freshly ground Black Pepper

8 slices hearty white bread, trimmed of crusts, a pullman loaf works well (slices should not be greater than ½ inch thick.

½ pound Sweet Ham, thinly sliced

½ pound fresh Mozzarella Cheese, grated or cut into very thin slices

Extra Light Olive Oil

In a wide shallow bowl, whisk the eggs with water.

In a separate wide shallow bowl or pie plate, mix the breadcrumbs, paprika, salt and pepper.

For each sandwich, place 1 slice of the trimmed bread in front of you. Place ¼ of the Ham and ¼ of the Mozzarella on top of the bread. Top with the second slice of bread. Press down on the sandwich with your palms to compress the bread, meat and cheese. Place the sandwich in the egg mixture. Let it sit for a few seconds. Turn it over and dip the other side. Hold over the bowl and let drain.

Place the egg-dipped sandwich in the breadcrumbs. Coat both sides well, patting the breadcrumbs on top and bottom.

When the sandwiches are breaded, heat 3 Tablespoons of the oil in a large deep saute pan until very hot, over high heat.

Reduce the heat to medium high. Two at a time, place the sandwiches in the hot oil. Place a heavy weight on top of the sandwiches (like a small cast iron pan). Let cook for 1 -2 minutes. Remove the weight. Turn the sandwich, weight again, and finish cooking for another 1 -2 minutes.

The outside of the sandwich should be a dark golden brown. On the inside, the ham should be warm and the cheese beginning to melt.

Serve immediately.
