Ingredients

For the chili spice mixture:

1½ teaspoons paprika

1½ teaspoons dried oregano

1½ teaspoons onion powder

1½ teaspoons chili powder

½ teaspoon cumin

½ teaspoon garlic powder

½ teaspoon cayenne

½ teaspoon red pepper flakes

½ teaspoon salt

½ teaspoon ground pepper

For the hamburger patties:

2½ pounds ground beef with at least 15% fat content

1 recipe chili spice mixture

1 teaspoon Worcestershire sauce

2 LARGE shallots, finely chopped (about 8 tablespoons)

Accompaniments:

8 slices cheddar cheese

8 slices cooked bacon

4 hamburger buns

4 pieces lettuce

4 ¼-inch-thick slices of tomatoes

4 tablespoons shallots, chopped

To prepare the chili spice mixture:

Mix all the ingredients well and set aside in a bowl.

To prepare the hamburger patties:

Add the spice mixture and the Worcestershire sauce and shallots to the ground meat and shape it into 4 patties.

Cook on a preheated barbecue over medium heat - about 5 minutes for medium-rare, 6 minutes for medium and 8 minutes for well done.

To finish:

In the last minute of cooking, place 2 slices of cheese and 2 slices of cooked bacon on top of each patty, and cook until the cheese starts to melt.

Place the cooked patties on buns. Assemble the hamburgers with the remaining accompaniments, and serve.
