Ingredients

1 recipe Sicilian Style Pizza Dough

16 thin slices of Ham (8 ounces)

¾ pound fresh Mozzarella cheese

Make the Sicilian Style Pizza Dough.

Slice the mozzarella into 16 thick slices, drain the slices well on paper towels if the cheese has been packed in water.

Divide the pizza dough equally into 16 balls. Roll out a piece of the dough into a 4-5 inch round. Roll a piece of ham around a slice of mozzarella and place it in the middle of the dough. Fold the dough over the filling to form a half moon shape and press or pinch to seal the edges well. Place the formed calzones on a baking sheet or pizza pan well dusted with flour or cornmeal. Repeat with the remaining ingredients. Cover the calzones with a clean, dry cloth and let rise for 20-30 minutes.

Bake the calzones in a preheated 450 degrees oven until the dough is golden brown 12-15 minutes. Brush them lightly with the egg wash and return to the oven to glaze, 1 minute more.

Let the finished calzones cool on a baking rack.
