Sautéed Spinach with Garlic & Red Peppers


3 tablespoons olive oil
1 red bell pepper, seeded and cut into ¼-inch dice
3 cloves garlic, finely chopped
1 pound fresh spinach
Salt and pepper to taste


Serves 4

In a nonstick sauté pan, heat the olive oil over medium heat.

Add the bell pepper and cook, stirring well, for 2 minutes. Add the garlic and cook 1 minute more. Add the spinach and cook for another minute, tossing well to amalgamate all the ingredients.

Add salt and pepper to taste, and serve.
