Roasted Garlic

1 large head garlic
1 teaspoon olive oil
Makes Approximately 1/4 Cup

Slice the top 1/3 off the head of garlic, brush with the olive oil and place the slice tops back on. Wrap the garlic in aluminum foil and bake in a 400 F oven for 35 minutes. When cool enough to handle, hold the head of garlic at the bottom and squeeze to force the pulp out. You can also remove individual cloves and squeeze them on at a time.
