Lemony Garbonzo Spread

Pure di Ceci al Limone


1(15-ounce) can garbonzo beans, rinsed and drained
2 garlic cloves
1 green onion, cut into 1 inch pieces
2 tablespoons fresh lemon juice
1 tablespoon extra virgin olive oil
1/4 teaspoon salt
2 tablespoons plain yogurt
Makes 1 1/2 cups

Process all the ingredients in a food processor or blender until smoth. Transfer to a serving bowl. The spread will keep for several days in the refrigerator. This is a great spread on garlic bread.
Chef's Tip:
Spice up this basic spread by adding your favorite spice or herb. Cummin or curry add wonderful flavor. Add chopped fresh herbs for a great herbal spread.
