3½ teaspoons salt, divided
1½ pounds green beans
3 tablespoons extra light olive oil
½ teaspoon red pepper flakes
1 tablespoon chopped garlic
½ teaspoon pepper
Bring a large pot of water to boil over high heat and add 3 teaspoons (1 tablespoon) of salt. Once the water reaches a boil, add the green beans and cook for 3 to 4 minutes until al dente. Take the beans out of the cooking water and place in a bowl with ice water to stop the cooking.
Once the beans are cool enough to handle, take them out of the cold water, dry them with a towel, trim them, and cut them in half.
In a large sauté pan, cook the olive oil over high heat. When it begins to sizzle, add the red pepper flakes. Stir for a minute, then add the green beans and cook, stirring well, for 2 minutes. Add the chopped garlic and cook for 1 more minute.
Sprinkle with ½ teaspoon each of salt and pepper, and stir well. Serve the beans while they are still hot.
