Ingredients:

1/2 recipe Pie Dough, partially baked
1/4 cup apricot jam or preserves
2 eggs
1/4 cup sugar
1 teaspoon vanilla
1/8 teaspoon salt
1/2 cup mascarpone cheese
1 cup toasted pine nuts

Prepare the pie dough. Partially bake the tart shell as directed using a 9 inch tart pan with a removeable bottom. Cool at room temperature on a baking rack. Spread the jam or preserves over the bottom of the cooled tart shell. Set aside.
Preheat the oven to 350 F. In a large bowl, combine the eggs, sugar, vanilla and salt, stirring until smooth and creamy. Add the mascarpone cheese and mix well. Stir in the pine nuts. Pour the mixture into the prepared tart shell and bake for 30 minutes, until the top is a golden brown. Remove from the oven and cool on a baking rack for 10-15 minutes. Serve warm or at room temperature.
