Ingredients:

¼ pound Spicy or Hot Italian Sausage, removed from the casing
¼ pound Ground Lamb
¼ pound Ground Veal
¼ pound Sliced Pepperoni
2 whole Eggs
¾ cup Breadcrumbs
¼ cup Grated Romano cheese
¼ pound sliced Provolone cheese
4 thin slices of Tomato
4 thin slices of Sweet Onion
4 Hamburger buns, or soft kaiser or onion rolls
1 peeled clove of Garlic

Pre- heat the broiler.
Process the pepperoni in the food processor until finely minced.
Combine the sausage, lamb, veal, pepperoni, egg yolks, breadcrumbs and Romano cheese. Do not over mix.
With clean hands, loosely form 4 hamburger patties. Gently flatten to an even ¾ inch thick.
Place the patties on a broiling pan and broil for approximately 4 - 5 minutes per side, until cooked through.
Toast the hamburger rolls lightly. Rub gently with a clove of garlic.
Place a slice of onion on the bottom half of the roll. Top with a burger. Top the burger with ¼ of the Provolone slices topped by a thin slice of tomato.
Chef's Tip:
These are moist burgers with a kick. The breadcrumbs hold moisture. If you can not find spicy sausage, you can use sweet sausage and ¼ to ½ teaspoon of red pepper flakes.
