Calzone Con Prosciutto Cotto
1 recipe pizza Dough (see pages 220-221)
1 cup + 2 tablespoons Pizza Sauce (see page 224)
4 Roma tomatoes, peeled and diced
12 (1/2 inch) slices fresh or smoked mozzarella cheese
1/2 pound thinly sliced ham
4 tablespoons chopped basil
1/2 teaspoon salt
Pepper to taste
Preheat the oven to 400 F. Divide the pizza dough into 4 equal pieces. On a floured board, roll out each ball of dough into an 8 inch circle.
Spread 1/4 cup of pizza sauce over each circle to within 1 inch of the edges. On 1/2 of each round, place 1 chopped tomato, 3 slices mozzarella, 2 ounces ham, 1 tablespoon basil, 1/8 teaspoon salt and a pinch of pepper.
Fold each calzone in half and seal the edges by pressing them with a fork. Place the calzones on a greased baking sheet and use the remaining pizza sauce to brush the tops. Bake for 30-40 minutes until golden brown.
