Broiled Mushrooms and Onions


2 onions, cut in half lengthwise and cut crosswise into 1/2 inch slices
1 pound mushrooms, stems trimmed and cut in half
4 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons lemon juice (optional)
1/4 cup freshly grated Parmigiano Reggiano cheese
4 tablespoons chopped fresh basil

Preheat the broiler. Place the onions and mushrooms on a baking sheet in an even layer. Drizzle the olive oil evenly over the top and sprinkle with the salt and pepper. Place under the broiler, 4-6 inches from the heating element, and broil for 15-20 minutes, until the edges of the onions are browned and the mushrooms have started to release their juices. Halfway through the cooking time, give the vegetables a good stir. Place the vegetables in a shallow serving dish or bowl. Sprinkle with the lemon juice, if you wish, the cheese and the basil. Serve hot or at room temperature.
