Ingredients:

4 (6-ounce) new white potatoes
4 tablespoons olive oil
1/2 teaspoon salt
1/8 teaspoon pepper
4 garlic cloves, chopped
2 tablespoons chopped fresh parsley
1 1/2 tablespoons butter

Do not peel the potatoes. Cut them in half lengthwise, then cut them in slices as thick as a quarter.
Heat the oil in a 12-inch nonstick pan set on high heat until sizzling, about 2 minutes. Add the potato slices and cook for 8 minutes, stirring every 2 minutes to ensure that they brown evenly without sticking or burning. Be very careful not to burn the potatoes during this stage. Reduce the heat to medium. Add 1/8 teaspoon of the salt and the pepper and cook 10 more minutes, stirring occasionally. Add the remaining salt, the garlic and parsley and cook for 5 minutes. Add the butter and cook for 5 minutes, stirring occasionally.
Chef's Tip:
While cooking, the potatoes will shrink in size and some of them will stick together. Don't worry - that's the look of this dish.
