Sun-dried Tomato and Cheese Spread on Garlic Toast

Ingredients:

1/2 cup ricotta cheese
1/4 cup goat cheese
2 tablespoons chopped oil-packed sun-dried tomatoes
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1 tablespoon lemon juice
1 tablespoon chopped fresh basil or 1 teaspoon dried
1 recipe Toasted Garlic Bread
4 tablespoons freshly grated Parmigiano Reggiano cheese
Serves 4 to 6

Combine the ricotta cheese, goat cheese, sun-dried tomatoes, salt, pepper, garlic powder, lemon juice and basil in small mixing bowl. Stir well to combine the ingredients completely and set aside. (The topping can be prepared the day before and refrigerated, covered, until needed.)
To serve, spread each slice of the garlic toast with the topping and sprinkle with the Parmigiano Reggiano cheese. Place on a baking sheet and broil for 2-3 minute, until the cheese is bubbly and browned. Serve immediately.
