Steamed Green Beans with Garlic & Tomatoes

Ingredients:

1 pound green beans, trimmed and cut in half
2 tablespoons olive oil
1/4 teaspoon red pepper flakes
4 garlic cloves, thickly sliced
2 tomatoes, peeled and chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup toasted pine nuts
3 tablespoons grated Parmesan or Pecorino cheese

Steam the green beans for 5 minutes. Place in a bowl full of water and ice to stop them from cooking. Then drain and set aside. (This can be done a day ahead.)
In a sautée pan, add the olive oil and the garlic, and red pepper flakes, and cook over medium heat for 5 minutes. Add the chopped tomatoes, salt and pepper cook over medium-high heat for 3 minute stirring well. Add the green beans and pine nuts. Stir well and continue cooking for 3 to 4 more minutes. Place the beans on a serving plate top with the grated cheese and serve.
