Stewed Peas with Sundried Tomatoes.
Piselli Stufati con I Pomodori Secchi
5 tbsp. of Olive oil.
8 garlic cloves thickly sliced.
2 cups of chopped onions.
3 Tbsp. of chopped sun-dried tomatoes packed in olive oil.
2 ¼ cups of frozen green peas.
½ tsp. salt.
Serves 6 to 8
Pour the oil and the garlic in a sauce pan and cook over medium heat for 3-5 minutes until the garlic starts to brown.
Add the onions and sun-dried tomatoes and cook for 15 minutes. Stirring every 5 minutes.
Add the peas, stir well to incorporate all the ingredients and cook for 35-40 minutes covered with the lid slightly ajar.
Add the salt and stir well. Place the peas on serving bowl and bring to the table. This dish tastes better when has prepared the day before and it is gently reheated before it is served.
