Ingredients:

1 recipe Pizza Dough
½ cup Pizza Sauce
1 Tablespoon Olive Oil
3 large Garlic cloves, thickly sliced
1 ( 10 oz.) box frozen, chopped Spinach
½ teaspoon Salt
¼ teaspoon freshly ground Black Pepper
½ cup grated Parmesan cheese
1 cup grated Mozzarella cheese
¼ cup pine nuts
¼ cup sliced fresh Basil
2 cups sliced Roma Tomatoes (about 4)

Make the Pizza Dough. Make the Pizza Sauce.
Preheat the oven to 500 degrees. If you are using a pizza stone, place it on a lower shelf and preheat it with the oven. If you are using pizza pans, arrange the racks in the lower half of the oven.
Drain the spinach of as much water as possible by pressing it between two plates or simply squeezing it by hand. Heat a skillet over medium-high heat. Add the olive oil and garlic. Cook the garlic until it begins to color, 1 minute. Add the spinach and cook for 3-5 minutes longer, until tender.
Divide the pizza dough in half. Pat or roll the dough into a 14" round. Place the round on a wooden pizza peel or pizza pan generously dusted with flour or cornmeal. Spread half the Pizza Sauce evenly over the dough round. Distribute half the spinach mixture evenly over the sauce. Top with half the grated Parmesan and Mozzarella cheeses. Add half of the tomatoes, basil, and pine nuts.
If you are using a pizza stone, slide the pizza directly onto the preheated stone. Alternately, place the prepared pizzas on the rack. Bake for 8-10 minutes, until brown, crisp, and bubbling. Remove the pizza from the oven, cut into wedges and serve hot.
To make a second pizza, repeat the steps with the remaining ingredients.
