Ingredients:

2 teaspoons olive oil
1 recipe Pizza Dough (see pages 220-221)
1 small white onion, thinly sliced
2 cups hot water
1 recipe Pizza Sauce (see page 224)
4 tablespoons freshly grated Pecorino Romano cheese
4 tablespoons Italian Bread Crumbs (see page 218)

Grease a 9 x 13 x 2 inch rectanglular glass baking dish with the olive oil. Stretch the pizza dough (which has risen for 1 hour) to fit the pan. Cover the pan and let the dough rise for 1 hour.
Whie the dough is rising, soak the onions for 1 hour in the hot water. This will reduce the pungency of strongly flavored onions. Drain the onions well and pat dry with a towel.
Preheat the oven to 400 F. Top the raised pizza dough with 1/2 of the pizza sauce, spreading it to cover the entire crust. Top with the drained onions, the remaining pizza sauce, the cheese and bread crumbs. Bake for 45 minutes. Cut into 4 pieces and serve on warm plates.
