Ingredients:

6 Roma tomatoes
3/4 teaspoon salt
2 1/2 tablespoons olive oil
1/4 teaspoon pepper
1 1/2 tablespoons chopped garlic
2 tablespoons chopped fresh parsley
2 tablespoons Italian Bread Crumbs
2 tablspoons grated Romano or Parnigiano Reggiano Cheese

Preheat the oven to 350 F.
Cut the tomatoes in half and squeeze out the seeds. Sprinkle with 1/2 teaspoon of the salt and turn them upside down on a rack to drain for 20 minutes. Place them on a broiling pan cut-side-up and brush with 3/4 teaspoon of the olive oil. Sprinkle with the remaining salt, the pepper, garlic, parsley, bread crumbs and cheese. Brush lightly with the remaining olive oil and cook in the preheated oven for 5 minutes. Brown lightly under the broiler and serve.
