Ingredients:

The yolk of one large egg
1 teaspoon Dijon mustard
2 teaspoons fresh lemon juice
1 teaspoon white wine vinegar
½ cup Extra Virgin olive oil
¼ teaspoon sea salt
Yield: ¾ cup

Put all ingredients except oil and salt into the food processor and process until well blended. With the motor running, slowly drizzle in oil until all oil is incorporated. Add salt to taste and blend well.
Chef’s Tip
If you feel like trying some more, add some paprika for a spicy finish, or some roasted garlic for a bigger taste.
