Ingredients:

1 cup chopped Cherry Tomatoes, (quarter then halve the quarters)
¼ teaspoon Salt
½ cup Mayonnaise
2 Tablespoons katsup
1 Tablespoon Sweet Pickle Relish
2- 6 ounce cans of Tuna packed in olive oil
¼ cup finely diced Onion
½ cup finely diced Celery
2 Tablespoons chopped Green Olives stuffed with pimento
2 Tablespoons Capers
3 Tablespoons grated Parmesan Cheese
2 Tablespoons fresh chopped Mint
4 large soft hero rolls or 12 slices country or hearty bread
1 whole peeled garlic clove
Serves 4 - 6

Dice the cherry tomatoes. Set in a small bowl. Sprinkle with the salt and set aside.
In a separate bowl, mix the mayonnaise, ketchup and sweet pickle relish until well combined. Set aside.
Place the drained tuna in a large bowl. Break it up with a fork. Add the onion, celery, olives, capers, and Parmesan cheese.
Add 5 - 6 Tablespoons of the mayonnaise mixture. Mix with the fork until well combined.
Drain the cherry tomatoes. Add to the tuna mixture along with the mint. Fold in gently.
Toast the bread. Rub with the garlic clove. Spread with some of the remaining mayonnaise mixture. Top with ¼ or 1/6 of the tuna mixture (hero or classic sandwich).
Serve immediately.
